Sauce Verte by Chef Raghu
(Green sauce for Braised Chicken)
Recipe
for green sauce like Braised Chicken. To taste with your grilled meats, fish,
chicken ... can be kept for 3 weeks in the fridge in an airtight container or
in a jar.

ml mayonnaise
1 good
bunch of fresh parsley
20gms
garlic clove
50ml
heavy cream
50gms
shallot
10gms
mustard powder
A
pinch of salt
A
pinch of sugar
A pinch
of white pepper
50ml olive
oil
Coarsely
chop the garlic clove and shallot.Finely mix the parsley leaves, garlic and
shallots with a tsp. tablespoon of fresh cream. Then add mayonnaise, 1 tsp of
cream and the mustard and mix again for a few seconds. Add salt, pepper, sugar
and olive oil and mix.
Serve
chilled.
