Pickled
shrimps by Chef Raghu
Peel,
devein and wash 500gms of shrimps. Make a brine of 500ml water, salt, 50ml
vinegar, 1tbsp of red pepper, 1tbsp of peppercorns, 1tbsp of cloves, 1tbsp of
all spice powder, tbsp. of mustard seeds and 6 bay leaves. Simmer slowly for 30
minutes the bring to the boiling point and add shrimps.
When
the brine again comes to boil, cook the shrimps for 5 minutes. Remove shrimps
and allow brine to cool. Fill it in sterilized jar tightly and store it in
refrigerator.
